2025.01.23 14:24 Sexy_ass_Dilf How long should I fermented hot peppers on a tropical climate?
This is my first try at a hot pepper ferment. I used Carolina Reapers (for spiciness), sweet drop peppers and sweet chili peppers (for flavor), with a tiny bit of sliced onions, garlic and carrots. 3% salt and 6% sugar to water ratio. It was supposed to ferment for 12 days before blending and storing on the fridge, but the receipt was for a 20c climate. In on hand I know 30 degrees is very different from 20, in the other hand I do think tge initial recepy was a little shy, just letting the peppers fermenting for 12 days while I see people here fermenting hot sauce for over a month. If anything 12 days at 30 degrees would be equal to 36 days at 20, right? That is how maths work, right?
First 3 days of fermentation it was great, a lot of bubbles and activity, no khan or molds even without the weights. On the 4th day activity started to slow down, and I start noticing the sediment accumulating at the bottom as expected with the bacteria and yeast dying. I thought this was a little early though. Even when I fermented fruit it took a week for fermentation to halt a little bit.
Today is the 7th day of fermentation and when I burp the jar (I never really open the lid, just listen for the "tssss" and see the bubbles) there is almost no bubbles at all. Bacteria buildup at the bottom is so thick I am not even sure this is just sediment anymore, when I move it, it feels thicker than water. The smell is absolutely amazing though, I can bearly hold myself to not try it. I can smell the sweet chilli pepper punch and a bit of the hotness when I burp it, it also has garlicy, vinegary, salty and umamy notes to it. Honestly smells like an awesome pepper sauce from a supermarket but less acidic, and more full of pepper hint, which seems absolutely ideal for me.
Should I be worried about the build up at the bottom? Should I keep it out of the fridge a little longer? What if there really is no more activity, leaving it outside enhance the flavor? Will I die if I eat this?

What do you think about the albums from BTS's "Chapter 2"? Which ones were your favorites, and which ones didn’t resonate with you as much? Why?
For me, my favorite albums were Hoseok (JITB and HOTS) and Yoongi (D-Day). Both have such unique styles that really resonate with me. Hoseok energy and creativity are unmatched, and his ability to experiment with different sounds and concepts always impresses me. As for Yoongi, his work reflects such depth and emotional storytelling that I truly appreciate. His music not only makes me reflect but also allows me to enjoy the artistic journey behind it.
Although I also liked Jimin (Face and Muse) and Jungkook (Golden) albums, I have to admit that, apart from their main tracks, the rest didn't hold my attention as much. I think their more mainstream approach makes them very accessible and enjoyable, which certainly contributes to their popularity, but personally I didn't connect as deeply with their projects in general. I'd like to clarify that mainstream is not a bad thing at all, at least not for me.
Jin’s album was similar in that sense, but I feel like his style leans more toward ballads. While it didn’t fully captivate me, I understand that his focus is more emotional, and his voice suits the genre beautifully.
Namjoon's albums (Indigo and RPWP) were incredibly interesting and full of introspection. Each had an artistic depth that really stood out to me, and I really enjoyed his overall vision on both projects. They show his thoughtful nature and his ability to blend different sounds while remaining true to himself.
As for Taehyung "Layover," while I appreciate the effort and the R&B-inspired sound, it’s a style that’s a bit outside my usual preferences, so I didn’t fully connect with it. It’s a more experimental and minimalist album, which makes it special in its own way, but it didn’t resonate with me as much as some of the others. But it does not mean that it is bad at all.
In the end, I think each album perfectly reflects the members’ individuality. As Namjoon once said, they all have very distinct styles, and that’s what makes exploring their solo projects so fascinating.

 | Newbie here.Back story: Recently completed a 1 day knife forging workshop where I made a chef knife (not the one pictured). After the quench, found this demo knife under quench table and asked if I could have it to try and make a bushcraft knife. It was covered in oil and ash, it was from a previous workshop day. All I've done so far is a bit of work with a 40g flap disc on angle grinder. I'm assuming it's been heat treated, but will need tempering. How should I go about finishing this? Namely the handle as it's very short as is. If i left as is, i could use my router to make a cut out in the wood the same shape as the handle, then sandwich the handle between 2 pieces of wood as a half tang. I've had my gold card with Amex since 2018. A few years ago they put a 2k limit on my account due to some changes in my credit profile. My scores in 2019 had dipped due to a missed payment with a Best Buy account. I have never been late on an Amex payment in that time, and have never carried a balance with them. Fast forward to last year and I was approve for the BCE with a 1k credit limit. My credit report shows my score now in the low 700's, and I put in for a 3x CLI increase.
I received the rejection today stating that I was not eligible for an increase because "An Amex account has a spending limit on it." What are my options? Close the gold card? Customer Service? I've heard Amex is really persnickety about removing those spending caps.
