2025.01.30 18:58 Humanoid_Person For those of you who have lived or have had relatives (parents, grandparents, uncles) who have lived a significant amount of time in Cuba before the Special Period, how would you say life was back then?
I'm French, and my only encounter with a Cuban was a few months ago in a taxi. He was pushing 60 and shared his perspective on life in Cuba. He told me that before the Special Period, he genuinely enjoyed life and even supported the government. But when the crisis hit and conditions worsened dramatically, he became staunchly anti-communist and risked his life to leave the country.
According to him, most Cubans viewed the revolution positively up until the 1990s (now everyone dreams of getting the f--- out). There were no blackouts, food/water was more accessible, and education, housing, and healthcare were of higher quality. This was very strange to me because I had always been taught that Cubaās decline began immediately after the revolution. I never had the chance to speak with him again or verify his claims, but I tend to trust the perspectives of Cubans themselves.
If there are any Cubans on this subreddit, can you confirm if this was your experience? Or have you or your relatives had a different perspective?

Well, Iāve almost made it. Iām counting down the last 11 hours of my 30 day fast and breaking with broth at midnight. I fasted only water, no electrolytes, supplements or anything. For stats, Iām 25M, 5 foot 8 and started at 228lb/103.4k. Today Iāve weighed in at 191lb/86.6k, with a total loss of 37lb/16.8k. I am aware that I will most likely gain back 10lb within the next 2 weeks as I start eating again and retaining water weight.
I donāt fast for health reasons, though the benefits are nice, Iāve always fasted for religious purposes as I am a Christian who believes there are powerful spiritual insights to gain from fasting, not just physical. Previously the longest Iāve ever done was 21 days and I gotta tell you, this fast was rough. The first 3 weeks were a breeze. On day 22 I had a loss in my family, as well as got sick so with grief and sickness the fast turned into a long nightmare. I got through the first 3 days of sickness okay, and considered breaking early if I didnāt show signs of improvement, but by day 25 I was getting better. The last 5 days were the longest and slowest, since I had been bedridden from sickness my daily walks were non existent, so where previously I could walk without issue the lack of movement made every trip to the bathroom cramp up my calves. All in all Iām glad I did this fast, and I canāt wait to finally eat again. I think I might take a break from extended fasting for a while after this, perhaps even a year unless I feel led by God. I was really grateful to discover this sub, as everyoneās journeys consistently encouraged me and reminded me I was not alone in this, even if everyone else has their own reasons and ways of fasting. Thank you everyone!

2025.01.30 18:58 lovgoos new LC health issues alert!!! š gallstones!!
This is insane. I am literally a 80 year old living in a 20yos body. Got an abdominal ultrasound today because I've been having issues with midback/abdominal/lower back pain that would come in an attack manner. I'd suddenly get this excruciating pain in my mid back that would spread to my back and when I leaned forward the pain would move onto my abdomen but leave my back, and when i laid down the pain would disappear from my abdomen and go to my back. It would come in waves so I would be in this horrible nausea and sweat inducing pain for 30 minutes then it would stop for 15 minutes then come back full force. I thought it was the famotidine I was taking because it made me horribly constipated and bloated but nope! Found some residual sludge from the 2 gallstones I passed (I had the attacks a total of 3 times but i can only see 2 gallstone sludge masses on the ultrasound so idk). The gallstone issue is most likely due to the covid induced GI issues since I had never had any problems like these before and it does probably stem from my stomach, but im too scared to get an endoscopy, but I will see that the doctor says. This on top of my POTS like symptoms and anxiety and depression is kicking my ass. I know so many people on this subreddit have it so much harder and I genuinely don't know how you do it. These issues compared to others are minuscule and I've only been in this for 3 months but i dont know how strong enough I am to take this for much longer until the issue resolve IF they resolve. The uncertainty of my future is killing me.

Cart of my "Italian Style" Landjaeger. This is not a traditional landjaeger seasoning blend. First pic/ presmoke, second pic/post smoke
50/50 blend pork shouldelean venison
1st grind coarse, 2nd grind medium.
Mixed with flash frozen liquid starter blend of three cultures: 1 for color and texture, 1 for acidification, 1 for breaking down enzymes and flavor (sorry I cant tell you exact blend, this is proprietary blend that gives my landjaeger its particular flavor. DM if you really need to know) : Salt, red chili flakes, garlic, oregano, basil, and 5% inclusion of chopped roasted red peppers.
Stuff into hog casings, then run the coils through our landjaeger press/cutter, this flattens the sausage into its distinctive rectangle shape and cuts each individual pair for hanging.
Cold smoked for 8 hours at 104* until a pH of 4.9 or lower. Hot smoked at 135 for 3 hours, this heat treat kills everything without overcooking the casing it also is the primary driver of water evaporation in our product. Final heat treat of product to 169* usually takes about an hour to go from 135 to 165, no smoke at this step. Not really necessary but it dries up the casing and ensures our water activity >0.96.
Have experimented a lot with different heat treats to finish, but jacking it up to 169 achieves my favorite texture and easily meets all of our critical limits.
I have been lurking on this sub for years, had been making landjaeger and salami at my home for just as long, started processing some venison for friends into landjaeger until i took the leap and bought a meat processing facility, I do game animals as well as inspected products.
I don't see landjaeger here often and am curious what your thoughts or questions about my favorite sausage are.

By basic, I mean general homeowner stuff, like drilling holes/screws into a stud. Asking because I'm about to return this new drill I got because it seems to be complete overkill (1,300 lbs. of torque) for that kind of thing, but the KickBack feature seems like it could be useful...
