Liebe Community,
ich habe kürzlich folgendes Produkt entdeckt und wollte bin begeistert: https://www.eatfreda.com/products/high-protein-margherita-8er . Diese Pizza hat nen Haufen Protein und schmeckt komplett normal, man würde es überhaupt nicht merken, dass da so viel Protein drinnen ist, meine Kritikpunkte sind aber folgende: 1. sehr teuer und 2. ist es unfassbar viel Verpackungsmüll der bei jeder Bestellung anfällt
Daher wollte ich sie nachbacken, habe aber das Problem, dass der Teig komplett widerspenstig ist. Muss auch zugeben, dass ich nicht viel Erfahrung backen bisher habe. Mein Rezept war bisher folgendes:
350g Type 405 Weizenmehl
50g Weizengluten
5g Salz & Zucker
1 Paket Trockenhefe
1,5 EL Olivenöl
Das dann mit dem Mixer 10 Minuten vermengen, 1-2 Std an nem warmen Ort gehen lassen und dann ausrollen bzw. im Kühlschrank lagern. Habe schon etwas rumprobiert aber bin noch nicht wirklich zu einem zufriedenstellenden Ergebnis bekommen. Habt ihr irgendeine Idee, wie man die Rezeptur verändern kann, sodass der Teig angenehm(er) zu handeln ist? Ich würde denken, dass das möglich sein muss, wenn die das auf einem industriellen Level produzieren. Hat ggf jemand Erfahrung damit? Im Internet findet man leider kaum etwas dazu. Danke im Voraus! :)
