I tried two recipes, one bouef bourguignon, another an All-American pot roast
Both of them involve cooking with a dutch oven in the oven with the lid ajar. One calls for 325, the other 275.
In the book, Food Lab, Kenji experimented with the lid on and ajar and the lid ajar allowed evaporative cooling to bring the stew temp to 187F. He says that's the idea temperature to slow cook meat in a pot roast.
However, these conditions for just 3 hours that's in his recipe did not led to tender fall-apart chuck.
Come to think of it, BBQ low-and-slow brisket calls for a target temperature of 200-205F for the collagen to turn to gelatin. If the stew is only being slow roasted at 187, it would never reach the temp for collagen to turn to gelatin. Brisket also takes 8-10hrs to reach fall-apart-tender.
So how is chuck doing this at 187 and at a lower amount of time?
I've successfully had super tender chuck when I lightly simmered everything on the stove with the lid on for 10hrs.

I have bought an omen 17 which uses a 230 watts charger, I had an omen 16 from 3 years ago which uses a 200 Watts charger.
Can I cable manage my 230 watt charger behind my desk which is where I do most of my gaming and heavy workload and use the 200 watt charger on the go as it is smaller?
I never do really intense rendering outside home, not enough for the laptop to ever reach really high workload and heat so power is not a concern.

I use a garmin instinct crossover and live at around ~4500 feet. Every time I go up to the mountains to go skiing/touring(~8000-10000 feet) I always get condensation under the glass that I cannot get rid of.
Is this an issue others have? The condensation always goes away once I stop my activity and start getting lower in elevation. Should I contact garmin about this issue ?
