So I wanna up my pizza game and I've heard poolish is the secret, but in almost all recipes that don't include poolish they say to let rest and then refrigerate for up to 36 hours to ferment and develop flavour, is this step necessary if I use poolish? Or is it another trick to make the dough even better along with the poolish?

For context when I was 18/19 I would only have sex with guys in there 40-50’s. Now at 29 I don’t really have random hookups as much but find myself only having sex with 50-60 year olds these days. 2025.01.30 14:42 ____uwu_______ Best setup to replace my storage spaces setup?
So, I currently have an old windows PC using a bunch of different, old disks in storage spaces for a Plex server. Some are wd, Seagate, Hitachi, some are 3.5, some 2.5, some upwards of 10 years old, and the whole array is about 8tb. Windows is installed on a small SSD, the disks are all linked and it's running Plex, sonarr, radarr, tautulli, qbittorrent and nordvpn. I also use it to store misc. garbage, but nothing is irreplaceable or mission critical. My problem is that storage spaces with parity is incredibly slow and without parity isnt much better. There's also issues with split tunneling in windows still.
I'm looking at replacing the whole setup with a Pentium/i3 nuc with a usb-c DAS enclosure. I'd like to be able to remotely access at least qbit/sonarradarr remotely using nzb360, and I do not want to route Plex through a VPN. I'd also like to be able to keep everything updated without much downtime
What's my ideal setup here? I'm thinking some flavor of Linux, zfs and docker, but I'm unsure of the specifics or the setup for them

Had my bathtub / shower retiled a year ago and I’m noticing that the grout around the seam where the tile and tub meet has begin to turn orange. Not sure if this is just soap scum or not, but in a few spots it looks like the grout is coming loose.
Should there even be grout here, or should I scrape it out and replace with caulk?
