2024.11.25 07:46 morticia_dumbledork How important is pasteurisation if you’re using pasteurised dairy and no eggs?
We’re in the R&D phase still and haven’t started ice-cream production yet.
The owner is not keen on buying a pasteuriser because we simply do not have space for so much new equipment.
It’s already a fully functional bakery. We’ve made space for batch freezers and regular freezers. But if a pasteuriser can at all be avoided, we would love to save any space possible.
Secondary question: is a blast freezer important to this set-up?
Tertiary question: Suppose one were to simmer the base mix and bring it up to temperature and hold it, can it directly be put into a batch freezer to rapidly cool down & churn?

 | Spent the whole day perusing this subreddit and looking at different sites and looking at seams and colors and ribbons and swirls and using a blacklight and still have no idea what any of these are. Every time I think I’m sure…I see another photo and I second guess myself. I’m guessing Vitro? Akro? The transparent ones being slags? Maybe Peltier? Photographing these is tricky business to catch the colors. And also…in one of the last group photos, there’s a pretty clear marble that anytime it catches light it shines? I am writing this on behalf of my brother. He is employed in a real estate company (a very renowned one in Mumbai). He was facing harassment at workplace so he sought transfer to Hyderabad. Now that he is in Hyderabad location- working for 9-10 months with them, delivering results, and getting real good sales, they are playing games. They have to roll out incentive payout for this quarter and they have held on to that payment. They called him for a meeting and told him that since he is a management trainee, they will have to reduce his pay by 50%. They are citing the reason that this is because the pay in Hyderabad location is such. Which is complete opposite to what the HR informed him when he was seeking a transfer (HR said that there won't be any hinderance to his pay). I want to ask, can they do this? While he is looking out for new roles in sales all around India, he is also figuring out if whatever is happening to him legal. Sorry for the long post. But can anyone help? What will be the right way through?
