2024.11.29 05:50 1bobbylane Running a little behind, Need advise
Doing my Thanksgiving turkey Sous Vide tomorrow (Friday). Got a little bit of a late start, Started the thighs this afternoon around 3 at 150 degrees F. Planning to eat around 4 pm tomorrow. The chef steps recipe I followed last year (which was amazing) called for the dark meat at 150 for 12 hours and then add the white meat at 130 for 12 hours. I'm just behind the eight ball here to get that sequence in time and was wondering if I could get away with the throwing the breasts in the 150 bath in the morning for closer to 8 hours and have similar results. My other option is to get up at 3am and put the breasts in and lower the temp to 130. Obviously wondering if I can avoid that 3am move. Thanks for any advice!

I recently picked up a HE v3 banger. Prior to this ive had only china bangers. The HE banger's weld is visibly much worse than any of my china bangers, it has no top bevel or any vortex holes. I'm scratching my head wondering why this banger was 20x the price of my other bangers. Is it the heat retention that is better? I don't see the value here.
