Smoked chuck roast Put the 22" kettle to work today.
Set up the coal ring with Fogo briquettes and wood. Lit 6 briquettes in the chimney, added them, put the diffuser in place. First cook since replacing the original grate with the SnS stainless grate. I'm loving the ability to use the entire cooking grate while using the heat diffuser, but it would really suck if I ever needed to add more charcoal. I guess that's why I love the WSM so much for anything I know will take a long time.
Used the TipTopTemp to regulate temperature.
